Why We're Starting
Everyday tea got cheap. Then it got weak.
So we started making it properly again.
We buy at auction from Assam and the Nilgiris, taste every lot with milk and sugar the way it will actually be drunk, and reject anything that turns flat, dusty, or bitter in the pan. That's the whole test.
Strong tea shouldn't be a luxury.
Garden to Cup
Assam, four in the morning. The pluckers move before the heat does.
Two leaves and a bud. Everything below that is filler, and filler is why most tea goes weak.
Spread thin on troughs overnight until the leaf has given up a third of its weight in water.
Steel rollers tear the leaf open so it surrenders its colour in seconds, not minutes.
Green turns copper. Forty seconds either side of the mark and it's a different tea entirely.
Six lots married into one cup, tasted with milk and sugar — the way you'll actually drink it.
Rolling boil, two minutes. Strong enough to take the milk and still taste like tea.
